  12. 1 cuillère à soupe vinaigre de vin blanc (l’idéal serait du vinaigre de malt pour être dans le goût anglo-saxon)
  13. 2 cuillères à soupe d’huile d’olive
  14. 125 ml d’huile (tournesol, colza ou mélange 4 huiles)
  15. 3 cuillères à soupe parmesan râpé (ou grana padano)
  16. Sel
  17. Poivre

Steps to make to make Salade César

  1. Découper le pain de mie en cubes (1,5 à 2 cms de côté)
  2. Faire chauffer un peu d’huile d’olive dans une poêle, y jeter le pain et faire dorer en croûtons
  3. Laisser refroidir les croûtons sur du sopalin
  4. Laver la salade et déchirer les feuilles, les jeter dans un saladier
  5. Émincer le poulet et couper la tomate en petits morceaux et ajouter le tout à la salade.
  6. Préparer la sauce César
  7. Mixer les anchois et la gousse d’ail jusqu’à obtenir une pâte.
  8. Dans un bol déposer la pâte obtenue, ajouter la moutarde, les jaunes d’œuf et le citron et battre le tout au fouet
  9. Ajouter petit à petit le mélange huile + huile d’olive tout en fouettant (il s’agit en fait de monter le tout en mayonnaise)
  10. Une fois toute l’huile incorporée, ajouter le parmesan et le vinaigre de vin blanc. Mélanger pour bien homogénéiser la sauce
  11. Saler poivrer à votre goût.
  12. Si vous trouvez la sauce trop épaisse vous pouvez la fluidifier en ajoutant à votre choix soit du jus de citron, soit du vinaigre de vin blanc
  13. Verser la sauce dans le saladier et mélanger à la salade
  14. Vous pouvez servir à l’assiette et ajouter des copeaux de parmesan.
