  3. Pour la sauce curry. Je fais un beurre manié avec 1 noix de beurre et 1 cuiller à soupe de farine et une cuiller à café de curry. Je mélange tout dans un bol puis j’allonge avec un peu de bouillon. Je mets le mélange dans une casserole et à feu doux je fais épaissir la sauce tout en versant petit à petit le bouillon. Je rajoute au fur et à mesure du curry selon mon goût. La sauce doit avoir la consistance d’une béchamel
  4. Enfin je fais cuire les pétoncles dans une poêle avec une grosse noix de beurre. Environ 2mn de chaque côté en les arrosant de beurre régulièrement. A la fin j’ajoute les amandes.
