  2. 400 g poitrine demi-sel
  3. 400 g sauce tomates au poivre de Sichuan (fait maison)
  4. 2 c à s de concentré de tomates
  5. 1 poireau
  6. 2 c à s d'huile
  7. sel, poivre
  8. thym,laurier

  1. Lavez les légumes. Dans une casserole, mettez a cuire la poitrine demi-sel dans 2 litres d'eau. Laissez bouillir 10 minutes, jetez l'eau lavez rapidement la poitrine sous l'eau froide. Dans la même casserole nettoyée, remettez a cuire la poitrine demi-sel dans 2 litres d'eau avec la partie verte du poireau, plusieurs branches de thym et 2 feuilles de laurier. Amenez a ébullition, baissez le feu, écumez, poursuivre la cuisson une demi heure environ.
  2. Retirez le trognon du chou blanc, enlevez les feuilles dures et émincez le chou finement (vous pouvez le râper, mixer etc). Faites chauffer l'huile dans une cocotte et dorez doucement le blanc du poireau coupé finement. Sortez la poitrine de la casserole et faites la sauter dans la cocotte avec le poireau.
  3. Ajoutez le chou émincé et mélangez, versez la sauce tomates maison, ajoutez le concentré de tomates et 1 litre d'eau de cuisson filtré de la poitrine (plus si vous préférez la soupe plus liquide). Poivrez, salez. Fermez la cocotte et cuire 30 minutes à la cocotte sous pression (20-30 minutes de plus pour une cocotte normale). Vérifiez si le chou et la poitrine sont cuits. C'est prêt. Vous pouvez ajouter si vous voulez des carottes et des pommes de terre 20 minutes avant la fin.
  4. Dressez en assiette. Servez avec des tranches de pain de campagne légèrement toastés ou avec de la polenta.
