- 3 cs cacahuètes
- huile d’olive, sel
- huile de sésame grillée
- sauce soja sucrée et tamari

- Émincer finement les échalotes, l’ail et le gingembre. Zester le citron vert. Émincer finement les poireaux. Couper le brocoli en morceaux. Émincer les feuilles de chou chinois en fines lamelles. Tailler la courgette en deux dans le sens de la longueur puis en biseaux. Couper le tofu en petits cubes. Émincer finement la coriandre et les oignons cébette. Plonger les nouilles de riz dans de l’eau bouillante pendant 3mn. Égoutter puis stopper la cuisson sous l’eau froide. Concasser les cacahuètes.
- Dans un faitout, faire revenir les échalotes, l’ail, le zest du citron vert et le gingembre dans 2 cuillères à soupe d’huile d’olive pendant 2mn. Ajouter la pâte de curry, la purée de piment et les poireaux émincés. Bien mélanger à feu doux pendant 2mn. Saler. Ajouter le lait de coco et bien mélanger. Incorporer le bouillon de légumes et ajouter le brocoli, les pois gourmands, le chou chinois, la courgette et le tofu. Cuire à feu doux pendant 10mn puis couper le feu.
- Ajouter la coriandre et la moitié des cébettes.
- Dans un wok, faire revenir les nouilles de riz avec un filet d’huile d’olive, un filet d’huile de sésame grillée, un filet de sauce soja sucrée et un filet de tamari. Saler légèrement. Ajouter les cacahuètes concassées et les pousses de soja et remuer. Cette opération au wok doit être brève, il ne s’agit pas de sur-cuire les nouilles.
- Dans un bol, déposer dans le fonds les nouilles de riz. Puis ajouter par-dessus les légumes et arroser de bouillon de coco. Parsemer d’oignons cébette émincés, arroser d'un filet de jus de citron vert et déguster aussitôt !
