  1. Cuisson du Poulet: Assaisonner la CUISSE DE POULET sur les 2 faces avec du SEL, du POIVRE et de la POUDRE d'ORIGAN, de BASILIC et d'AIL - Faire cuire pendant 1 heure au Barbecue en retournant toutes les 10 minutes
  2. Cuisson des Œufs (pendant la Cuisson du Poulet) : Faire bouillir de l'EAU dans une Casserole sur feu vif - Quand l'EAU boue passer sur feu moyen et mettre 2 ŒUFS à cuire pendant 10 minutes - Arrêter la cuisson dans un bain d'EAU glacées
  3. Préparation de la sauce (pendant la Cuisson du Poulet) : Couper un CITRON en 2 et presser le 1/2 CITRON - Reverser le JUS DE CITRON dans un Verre et rajouter 1.5 cuillères à café de VINAIGRE DE VIN, 10 gouttes de SAUCE WORCESTERSHIRE 10 goutes de SAUCE TABASCO - Réserver dans un Verre 25g de CRÈME LIQUIDE - Casser le 4e Œuf et réserver 1/2 JAUNE D'ŒUF
  4. Création de la sauce (pendant la Cuisson du Poulet) : Couper l'Œuf DUR en 2, Épelucher la GOUSSE D'AIL et en réserver 1/4 - Dans un Hachoir mettre 1/2 ŒUFS DUR - Ajouter 3 Anchois, 10g de PARMESAN brisé en morceaux, 1/4 de GOUSSE D'AIL et le 1/2 JAUNE D'œuf - Mixer jusqu'à obtenir une PÂTE - Ajouter le mélange de JUS DE CITRON puis remixer - Ajouter progressivement les 35 ml d'HUILE D'OLIVE en mixant tous les 5 ml - Finir en ajoutant les 25g de Crème LIQUIDE puis en remixant
  5. Préparation de la Garniture : Réserver 7 CROÛTONS - Couper l'Œuf DUR restant en 2 et le reserver avec le 1/2 ŒUF DUR restant - Couper la VIANDE de la CUISSE DE POULET en morceaux de la taille d'une bouchée - Faire des copeaux de PARMESAN en decoupant 20g de PARMESAN avec une Eplucheur
  6. Dressage : Déchirer les feuilles de SALADE et les placer au fond d'une Grande Assiette Creuse - Disposer les CROÛTONS, les ŒUFS DURS les MORCEAUX DE POULET, puis verser 3 cuillères à soupe de SAUCE CÉSAR - Finir avec des COPEAUX de PARMESAN au centre
  7. Variantes : Le PARMESAN peut être remplacé apr du GRANA PADANO - La cuisse de poulet peut être remplacé par un BLANC DE POULET ou du TRAVERS DE PORC
