- 2 kg Chicken
- 2 Bay leaves
- 2 Cinnamon stick
- 2 Star annise
- 4-5 Green cardamom
- 6-7 Cloves
- 1 tsp pepper corns
- 2 tbsp Ginger garlic paste
- as per taste Salt
- 1 tbsp coriander powder
- 1 tbsp Chilli powder
- 1 tbsp Biryani Masala
- 1 tbsp turmeric powder
- 1 tsp Cumin powder
- As needed Juice of 1lime
- 1 cup yoghurt
- 1 cup oil
- 3-4 green chilli
- 1 cup Coriander leave
- 1 cup mint leaves
- 5 medium onions (chopped and deep fried until golden brown)
Instructions to make to make Authentic Hyderabadi Biryani
- Into a blender jar add chillies, coriander and mint leaves with all the whole garam Masala grind well.
- Into a biryani pot add chicken, grinded masala, ginger garlic paste and yoghurt
- Add chilli powder, turmeric powder and coriander powder
- Add biryani masala, cumin powder and salt
- Add half fried onions and mix well, then add lime juice
- Add chopped mint and coriander, add leftr over onions and oil
- Mix all the ingredients together cover and marinate over night (4hrs minimum)
- Soak basamati rice for half n hour, hear water in a pan
- Add rice to hot watee and cook until rice is cooked 70%
Strain rice and layer on marinated chicken - Add food colors, chooped coriander and mint leaves
- Add onions and repeat the process with leftover rice
- At last add ghee cover with aluminium foil and keep it on sim for 45 mins
