- 2 kg poireaux
- 1 boite de lardons (200g)
- 1 brique de lait de soja ou crème fraiche
- 6-7 échalotes
- beurre (des bons bouts)
Steps to make to make Fondue de poireaux
- On épluche et on émince les échalotes. Une fois que c’est fait, on lave les poireaux et on enlève les bouts (le bout avec les racines et des bouts des feuilles si elles sont trop abimées).
- Ensuite on verse les échalotes avec un morceau de beurre dans la cocotte minute (ou la casserole ça marche aussi) et on fait revenir à feu doux.
- Pendant ce temps, on coupe les poireaux en rondelles (pas besoin de se prendre la tête pour la taille des rondelles, le poireaux réduit beaucoup à la cuisson).
- On ajoute ensuite les poireaux par dessus les échalotes, on verse aussi les lardons, un morceau de beurre et on mélange le tout.
- On met le couvercle à moitié (qu’il ne soit pas totalement fermé) et on laisse cuire jusqu’à ce que les poireaux deviennent fondants (environ 30 min) tout en remuant de temps en temps. Tu vas voir assez facilement si tes poireaux sont prêts, ils auront réduit à la cuisson (bien moitié moins), les bouts blancs des poireaux seront légèrement translucides et globalement ça ressemblera plus à une tambouille qu’à tes belles petites rondelles du départ XD
- Une fois que tes poireaux te semblent cuits, tu peux alors ajouter la crème, il faut en mettre assez pour envelopper tous tes poireaux dedans mais pas trop non plus et les noyer dedans, on ne sentirait plus que la crème…
- Tu fais mijoter à feu doux 5min et c’est prêt à être servi :)
