- 6 pommes de terre
- 650 gr tomates fraiches
- 1 poireau + 1 branche de céleri + 1 fenouil
- 4 oignons + 3 gousses d'ail
- 1 zest d'orange bio
- 1 pincée de graines d'anis + 2 badianes
- Huile d'olive + sel + poivre + piment d'espelette
- 1 grosse pincée de safran
- 1 sachet de croutons nature ou à l'ail
- La ROUILLE
- 4 gousses d'ail
- 1 grosse pomme de terre
- 2 jaunes d'oeufs
- 2 cuillère a soupe de bouillon de poissons (que vous ferez au début de la recette avec tête et arêtes de poissons)
- 1 dos de safran
- 2 grosses pincées de piment doux
- Huile d'olive
Steps to make to make Bouillabaisse
- Enlever les arêtes des poissons. Couper le rouget et la daurade en sashimi. Couper la lotte et le st pierre en gros morceaux.
- Peler et émincer les oignons et l’ail. Monder et épépiner les tomates. Laver, émincer et couper en morceaux le fenouil, le poireau et le céleri. Éplucher, laver et couper les pommes de terre en tranches.
- Dans une cocotte, faire revenir les têtes et arêtes de poisson (il faut des sucs, donc laisser prendre légèrement au fond) puis rajouter les oignons et l’ail dans 2 cuillères à soupes d’huile d’olive. Déglacer les sucs avec 1 à 2 grands verres de vin blanc sec. Ajouter les tomates, le bouquet garni, les morceaux de fenouil, le poireau et le céleri, les graines d’anis et le zeste d’orange. Remuer et laisser 5 min sur feu vif.
- Verser 3 l d’eau (personnellement je fais a côté un bouillon d'épluchures avec les restes des légumes), saler, poivrer, pimenter (a votre convenance). Couvrir et laisser mijoter 40 min à 1H. Gouter et assaisonner à votre convenance. Mixer et passer ce bouillon au chinois. Reverser le bouillon obtenu dans la cocotte.
- Ajouter les morceaux de poisson en commençant par les plus longs à cuire (lotte), les tranches de pomme de terre et la pomme de terre entière de la rouille (mettez la à cuire dans le bouillon dans un chinois à part pour la retrouver plus facilement). Laisser 20/25 min à feu doux. Ajouter le st pierre, le safran et poursuivre la cuisson 10 min. Réviser l’assaisonnement.
- LA ROUILLE: Peler et écraser les gousses d’ail. Les écraser avec la pomme de terre (Surtout pas au robot! Presse purée seulement), le piment et 2 louches de bouillon de cuisson. Ajouter les jaunes d’œufs, le safran et monter en versant l’huile d’olive petit à petit. Saler et poivrer.
- Déposer dans une assiette creuse, les sashimis de rouget et de daurade. Verser la bouillabaisse bouillante au dessus. Déposer dessus les croutons et la rouille.
