- Préparez d'abord un bouillon : dans un grand faitout ajoutez l'os de veau, 1 oignon piqué de clous de girofles, 1 branche de thym, 1 feuille de laurier, le vert du poireau, 1 carotte 1 grosse pincée de gros sel, 4 grains de poivre entier. Couvrez avec 3l d'eau froide. Portez à ébullition à feu vif, puis laissez à petits bouillons pendant 1h30.
- Dans une cocotte, faites fondre à feu doux le beurre dans l'huile de tournesol et retirez du feu dès que le beurre est fondu. Hors du feu ajoutez la viande de veau, les légumes taillés en rondelles épaisses. Couvrez à hauteur avec le bouillon. Ajoutez 1 pincée de piment d'Espelette. Remettez à feu moyen pendant 1h30.
- Au bout de ce temps ajoutez les pommes de terre (entières ou coupées en gros cubes selon la taille) et les champignons. Ramenez à ébullition et laissez encore à feu moyen pendant 30 minutes
- En fin de cuisson ajoutez le Gorgonzola au Mascarpone, laissez fondre et mélangez délicatement
- Servez sans attendre !
